  4. Heat Oil in a large frying pan over medium to high heat, cook Onion and Bacon. If you cook Spinach with them, add Spinach after Onion is softened, and cook only until Spinach is wilted. Remove excess liquid. Season with Salt & Pepper if you like.
  5. Combine the vegetables and White Sauce, place the mixture in a baking dish. Arrange the Eggs on top, sprinkle with Cheese. Bake for 15 to 20 minutes or until golden.
  6. Ready to serve and ENJOY!
